Hoppin' John

• 1 pint Guinea corn*
• 1 quart Black Eye peas (canned)
• ½ lb. bacon, cut into cubes
• 1 lb. salt beef, cooked
• 1 medium onion, sliced
• salt and pepper (to taste)
• ½ teaspoon thyme
• water

In a heavy pot, boil corn until soft. Add Black Eye peas, thyme, salt and pepper, salt beef and bacon. Boil to obtain a thick mixture. Season to taste.
