Hoppin' John
1 pint Guinea corn*
1 quart Black Eye peas (canned)
½ lb. bacon, cut into cubes
1 lb. salt beef, cooked
1 medium onion, sliced
salt and pepper (to taste)
½ teaspoon thyme
water
In a heavy pot, boil corn until soft. Add Black Eye peas, thyme, salt and pepper, salt beef and bacon. Boil to obtain a thick mixture. Season to taste.
